Caramel Apple Bread Pudding

Preparation 20 minutes 2017-08-16T00:20:00+00:00 Cook Time 33 minutes 2017-08-16T00:33:00+00:00 Serves 4 ramekins     adjust servings

It's like having dessert for breakfast!

Ingredients

  • 1/2 cup butter, unsalted
  • 3/4 cup packed brown sugar
  • 1 cup heavy cream
  • 3/4 cup milk
  • 4 large eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 3 apples, cored, peeled, chopped in chunks
  • 1/2 cup raisins
  • 1/2 cup pecans, chopped
  • 3/4 loaf of Challah bread or French bread
  • caramel ice cream topping for drizzle

Instructions

  1. Preheat over to 350 degrees.
  2. Spray 4 - 5-inch ramekins with non stick cooking spray and set aside.
  3. In a small microwave safe bowl melt butter in microwave, mix in brown sugar until smooth.
  4. In a large bowl beat heavy cream, milk, eggs, and vanilla.
  5. Mix in the butter and brown sugar mixture.
  6. Add apples, raisins, and pecans.
  7. Once combined, tear bread into bite size pieces.
  8. Combine well and make sure every piece of the bread has absorbed as much of the milk mixture as possible.
  9. Disburse among the ramekins.
  10. Place ramekins on a baking sheet, bake for 33 minutes.
  11. Serve hot.
  12. When ready to eat drizzle caramel ice cream topping on top.

      Yes, you can bake this in a larger pan. I think it will fit into a 9X13. Once you’ve made the recipe it will help you judge better on the size. But I think there is enough bread pudding to fill the larger size. Good Luck! You are going to LOVE this Bread Pudding. My family did! 🙂
