Cheesecake for Breakfast?  YES PLEASE!  Anyone that knows me knows my favorite dessert is cheesecake.  My favorite is Dulche de Leche so I am game when I can legitimately have it for breakfast!  These Berry Cheesecake Muffins are exactly what I need on a busy weekend! When I make these Berry Cheesecake Muffins I double the recipe.  They freeze beautifully and they get me through those busy mornings when making breakfast isn’t an option.  I love the freshness the berries offer along with the creamy texture of the cream cheese filling.  Perfect for a brunch too! Potato Salad Deviled Eggs

Potato Salad Deviled Eggs - Lady Behind The Curtain

Potato Salad Deviled Eggs are the perfect finger food at any celebration.  I don’t know about you but to me it’s not a party without deviled eggs!  I was asked to bring potato salad to a ladies function and decided to change it up a bit with these Potato Salad Deviled Eggs.  Everyone was surprised when I showed up with deviled eggs instead of a bowl of potato salad.  But once they tasted these they completely understood.  When you think about it everything in deviled eggs is in potato salad.  At least the base ingredients are.  To make these fun … Continue reading

Celebration Citrus Layered Cakes

Celebration Citrus Layered Cakes - Lady Behind The Curtain

These Celebration Citrus Layered Cakes are so much fun!  The flavors of lemon, orange and lime really compliment each other.  The colors are exquisite and very pleasing to the eye.  I also added layers of my Bakery White Frosting. Give the gift of flowers and cupcakes with my push up pop arrangement!  I love the battery operated tea lights on top.  They make the arrangement look like candles until you look closer and see CUPCAKES! Don’t have push up pops?  How about adding them to a half pint jar with a birthday candle? PrintCelebration Citrus Layered Cakes Ingredients1 lemon cake … Continue reading

Churro Waffle Sticks

Churro Waffle Sticks - Lady Behind The Curtain

These Churro Waffle Sticks are actually made with a churro mix!  Light on the inside and crispy on the outside.  I also made a Mexican Chocolate Ganache. The batter for these Churro Waffle Sticks is very thick so I added the batter with an ice cream scoop and pressed down the lid until it locked in the closed position.  These waffles cook a lot longer than your typical waffles about 10 minutes!  Don’t worry they are still doughy and delicious!  Once the waffle are taken out of the iron, (only work with one waffle at a time; you want the … Continue reading

Mexican Chocolate Ganache

Mexican Chocolate Ganache - Lady Behind The Curtain

This Mexican Chocolate Ganache is rich, creamy with a hint of cinnamon.  To make this chocolate I used Mexican hot chocolate tablets which are coated with sugar and infused with cinnamon.  The sugar coated chocolate adds a little crunch to the ganache. Dip your Churro Waffle Sticks in this delicious chocolate!  You can also use it to dip cinnamon chips or regular churros.
