Lady Behind The Curtain - Pineapple Coconut Bars

Add a touch of the tropics to your holiday cookie tray with these wonderful bars.  So good in fact I took them to Sunday School so I could get them out of the house and stop myself from eating all of them!  :)  You know when a recipe starts with a cake mix that it’s going to be good and more importantly EASY!

Pineapple Coconut Bar Recipe ( serves 36 bars)

Ingredients (base)

1 pudding included yellow cake mix (Pillsbury)

1-1/2 cups quick-cooking rolled oats

1/2 cup butter, softened

1 egg

1 filling recipe (below)

1 topping recipe (below)

1 glaze recipe (below)

Directions

Heat oven to 350 degrees.  Lightly grease a 13×9-inch baking pan.  Combine all base ingredients and blend until crumble.  Reserve 1-1/2 cups of the crumb mixture.  Press remaining crumb mixture in bottom of greased pan.

Filling Recipe

Ingredients

1/2 cup all-purpose flour

1-14 ounce can sweetened condensed milk

1-8 ounce can crushed pineapple, well drained, reserving liquid

Directions

Combine all filling ingredients; blend well.  Pour into crust-lined pan.

Topping Recipe

Ingredients

1 cup chopped macadamia nuts

1 cup coconut

1 cup vanilla milk chips

Directions

All all topping ingredients to reserved crumb mixture; mix well.  Sprinkle evenly over filing.  Bake for 30 to 40 minutes or until golden brown.  Cool completely.

Glaze Recipe

Ingredients

1 cup confectioners’ sugar

4 to 6 teaspoons reserved pineapple liquid

Directions

Combine confectioners’ sugar and enough reserved pineapple liquid for desired drizzling consistency; blend until smooth.  Drizzle over bars.  This recipe is from the Pillsbury Best of the Bake Off 1996 Cookbook.
