This Snickerdoodle Bread recipe makes TWO loaves.  Make sure you tuck one away in the freezer.  My family loves anything with cinnamon and sugar like these Mini Cinnamon Toast Muffins or my Glazed Donut Muffins.

Snickerdoodle Bread

Ingredients

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 2-1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 - 10 ounce package cinnamon chips
  • 2 tablespoons all-purpose flour
  • For the Topping:
  • 2 tablespoons granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare TWO 9-inch x 5-inch loaf pans by greasing or spraying with cooking spray.
  3. In a large bowl, combine , butter and sugar; cream together for 2 minutes until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Add vanilla and sour cream, mix to combine.
  6. In a separate bowl, combine flour, baking powder, salt, and cinnamon, whisk to combine.
  7. Add flour mixture to creamed mixture, stirring just until combine.
  8. Coat the cinnamon chips with 2 tablespoons flour, then stir into the batter.
  9. Spoon batter into prepared pans.
  10. Combine sugar and cinnamon for topping.
  11. Sprinkle topping over batter before baking.
  12. Bake in preheated oven for 55-60 minutes until a toothpick inserted in center of loaf comes out clean.
  13. Remove from oven and let cool for 15 minutes before removing bread from pan.
  14. SERVE WITH CINNAMON BUTTER

    I have a quick question. I don’t have to loaf pans. I know some recipes do not do well when you 1/2 them, have you ever made just one loaf? Could I make this in a bundt pan instead?
