Toffee Cashew Crunch Bars - Lady Behind The Curtain

These toffee cashew crunch bars come with a WARNING!!!  Make these and get them out of the house as soon as you possibly can or you will EAT ALL of them yourself!  These cookies were the yummiest (is that a word?) cookies I have had in a LONG time.  These would make the perfect teacher gift, neighbor gift, Sunday School Teacher gift, Office Staff gift….well you get the picture.  THE PERFECT GIFT FOR ANYONE!!!

Toffee Cashew Crunch Bars

A Holiday Cookie Tray must!

Ingredients

    For the Crust:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 1-1/2 cups all-purpose flour
  • For the Filling:
  • 1 cup packed light brown sugar
  • 1/2 cup unsalted butter, cut into pieces
  • 1/4 cup dark or light corn syrup
  • 1/2 cup heavy cream
  • 2 teaspoon vanilla extract
  • 3 cups salted cashews, coarsely chopped

Instructions

    For the Crust:
  1. Preheat oven to 350 degrees.
  2. Line 13-in. x 9-in. pan with nonstick foil, letting foil extend 2 inches at short ends.
  3. Beat butter until creamy.
  4. Beat in sugars, yolk, and salt.
  5. On a low speed beat in flour until blended (dough will be crumbly).
  6. Press evenly into bottom of prepared pan.
  7. Bake 25 minutes, or until golden brown at edges.
  8. Cool in pan on wire rack.
  9. For the Filling:
  10. In saucepan on medium combine sugar, butter, and corn syrup.
  11. Cook, stirring occasionally, until butter melts.
  12. Bring to full boiling; boil 1-1/2 minutes, whisking a few times.
  13. Remove pan from hear, and stir in cream, vanilla extract, and cashews.
  14. Pour filling over crust and spread evenly.
  15. Bake 25 minutes, or until filling is bubbly all over.
  16. Cool completely in pan on wire rack.
  17. Lift foil edges to transfer bars to cutting board.
