Breast Cancer Awareness Cherry Vanilla Cupcakes
October is Breast Cancer Awareness month. To help with the many bake sales going on throughout the month of October I decided to create these Breast Cancer Awareness Cherry Vanilla Cupcakes. Whether you sale them individually or for half a dozen your patrons will be VERY pleased with these cherry filled cupcakes topped with a fluffy vanilla cream frosting.
TIP: When packing up cupcakes to either sale or for an event I visit my local grocery stores bakery. They will either sale me their plastic cupcake containers or donate them (depending on what I need them for).
Breast Cancer Awareness Cherry Vanilla Cupcakes
Bake sale cupcake!
Ingredients
For the Cherry Vanilla Cupcakes:
- 1 - package white cake mix
- 3 ounce package cherry gelatin
- 4-serving size package cheesecake instant pudding mix
- 1-1/4 cup from reserved cherry juice (about 1/2 cup) plus milk or vanilla creamer
- 4 eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 14.5 ounce tart cherries (NOT the pie filling), drain and reserve juice
For the Vanilla Frosting:
- 1 cup butter, softened
- 1 teaspoon vanilla extract
- 8 cups confectioners' sugar
- 1/2 cup plus 3 tablespoons whipping cream
Instructions
For the Cherry Vanilla Cupcakes:
- Preheat oven to 350 degrees.
- Line 27 muffin cups with 27 cupcake liners and set aside.
- In a large mixing bowl add the cake mix, gelatin, pudding mix, reserved cherry juice and milk, eggs, oil and vanilla. NOTE: Add reserved cherry juice to a 2 cup measuring cup and add enough milk or vanilla creamer to measure 1-1/4 cups.
- Beat until creamy.
- Add the cherries and beat 1 more minute.
- Fill muffin cups two-thirds full.
- Bake 20 minutes or until a toothpick inserted into the center comes out clean.
- Place muffin tin on cooling rack.
- Cool 10 minutes on rack then take out of tin to cool completely.
For the Vanilla Frosting:
- In a large mixing bowl beat butter until creamy.
- Beat in vanilla.
- Gradually add 4 cups sugar, beating until combined.
- Beat in 1/2 cup whipping cream. Beat in the remaining 4 cups of sugar.
- Beat in the remaining 3 tablespoons of whipping adding 1 tablespoon at a time until frosting is light and fluffy.
