Chocolate Marshmallow Raspberry Parfaits - Lady Behind The CurtainThese chocolate marshmallow raspberry parfaits are light, fluffy and packed with flavor.  Just like a chocolate dipped raspberry with a creamy filling.

Serve this light and tasty dessert with your Valentine’s Day dinner.  After a big heavy meal it’s nice to have a light dessert.

Chocolate Marshmallow Raspberry Parfaits

Preparation 30 minutes 2017-11-17T00:30:00+00:00 Serves Makes 6     adjust servings


For the Chocolate Layer

  • 2 (8 ounce) Cool Whip
  • 3.9 ounce chocolate fudge pudding mix

For the Marshmallow Layer

  • 7 ounce jar marshmallow fluff
  • 1/2 cup butter, softened
  • 1 cup confectioners sugar
  • 1/2 teaspoon vanilla extract
  • plus (optional) 1 vanilla bean, scrap out seeds
  • 1 cup mini marshmallows

For the Raspberry Layer

  • 8 ounce Cool Whip
  • 6 ounce box raspberry gelatin


    For the Chocolate Layer:

    1. In a large bowl mix together the cool whip and pudding mix until well combined.
    2. Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag.

    For the Marshmallow Layer:

    1. Beat together the marshmallow cream, butter, sugar and vanilla until fluffy.
    2. Fold in marshmallows.
    3. Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag big enough to allow the marshmallows to pass through.

    For the Raspberry Layer:

    1. In a medium bowl mix together the Cool Whip and raspberry gelatin until well combined.
    2. Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag.

    To Put It All Together:

    1. In a 8 ounce clear container; add layers.
    2. Starting with the chocolate then the marshmallow ending with the raspberry.
    3. Optional: Sprinkle with hearts.
    4. Cover with plastic wrap and store in the refrigerator until ready to serve.
