Copycat California Kitchen Barbecue Chicken Pizza Slab Pie
- 1 (13.8 ounce) store bought pizza crust dough
- 1/2 cup plus 3 tablespoons sweet barbecue sauce, divided (I used Stubs Sticky Sweet)
- 2 cups chicken breast, cooked and shredded
- half small red onion, sliced
- 2/3 cup shredded carrots
- 1/3 cup sliced almonds
- 2 tablespoons fresh cilantro, chopped
- 8 ounces fresh mozzarella cheese, sliced or torn into pieces
- salt and pepper
Preheat oven 400°. Lightly spray a 15x10x1-inch baking pan with non stick cooking spray. Place dough in prepared pan, press up the sides. Place shredded chicken in a medium bowl, add 3 tablespoons of barbecue sauce, stir until combined and set aside. Pour the remaining 1/2 cup of barbecue sauce on the pizza dough, spread evenly. Add chicken, sliced onion, carrots, almonds, cilantro and mozzarella. Sprinkle with salt and pepper. Bake 15 to 18 minutes or until sides or golden, cheese is melted and bubbling.
