Game Day Mexican Food Grabs | Oh my gosh! Is there anything better then game day food? It’s the one time all your favorite foods are on one table in mini form so you can HAVE THEM ALL! We have a big game this weekend so I decided to put a Mexican flare to the food. Most times we have dip, sliders, poppers, cupcakes….well, you get the picture. So…. today was a GREAT day! WE WON and the food was a winner too!
I’ll get to the decor later…the food was the real star of this table.
Let’s start with the beverage of choice! Budweiser™ Bud Light and Oculto. The perfect combo. These two choices have something for everyone. Bud Light offers a light crisp flavor while the Oculto has a touch of a tequila flavor. My hungry game watchers are enjoying ONE beer during the game while eating all the yummy food I made for them!
For the food (sweet and savory) I used Old El Paso™ Mini soft tortilla taco boats and Old El Paso™ Stand N’ Stuff flour tortillas to make FOUR recipes! I LOVED using them for my party table. The Mini soft tortilla taco boats and the Stand N’ Stuff flour tortillas made my party planning super easy. Not to mention tasty too! I was so excited to spot not only the beer but these awesome Mini Taco Boats and Stand ‘N Stuff tortillas at Walmart!
HERE’S WHAT I CREATED!
With the Old El Paso™ Mini soft tortilla taco boats I created apple pie and no bake cinnamon cheesecake desserts.
APPLE PIE
INGREDIENTS
12 El Paso™ Mini soft tortilla taco boats
2 tablespoons unsalted butter, melted
granulated sugar and ground cinnamon
1 (21 ounce) can apple pie filling
1 tablespoon granulated sugar
1 tablespoon light brown sugar, packed
1 teaspoon ground cinnamon
OPTIONAL: whipped topping with ground cinnamon sprinkled on top
DIRECTIONS
Preheat oven to 350°.
Place taco boats on a cookie sheet. Brush melted butter on the inside and up the sides of the taco boats; sprinkle with a pinch of sugar and a dash of cinnamon. Bake 5 minutes.
Meanwhile make the pie filling. Spoon the apple pie filling into a medium bowl. Chop the apples into smaller pieces. Add the 1 tablespoon sugar, brown sugar and 1 teaspoon of cinnamon. Stir to combine. Fill each boat three fourths full. Bake 8 minutes.
Set aside to cool completely. Add optional whipped topping and cinnamon.
NO BAKE CINNAMON CHEESECAKE
INGREDIENTS

1 (8 ounce) cream cheese, softened
1 cup whipped topping
1/2 teaspoon ground cinnamon
1 cup confectioners sugar
OPTIONAL: cinnamon cookie topper
DIRECTIONS
Preheat oven to 350°.
Place taco boats on a cookie sheet. Brush melted butter on the inside and up the sides of the taco boats; sprinkle with a pinch of sugar and a dash of cinnamon. Bake 8 minutes.
In a medium mixing bowl mix the cream cheese until light and fluffy. Add the whipped topping and cinnamon; whip until combined. Add the confectioners’ sugar in small amounts making sure the sugar has been completely incorporated.
Spoon into prepared tortilla boats and top with cookie.
With the Old El Paso™ Stand N’ Stuff flour tortillas I made Mexican Pizzas and Open Face Burritos! So good and so easy to make!
MEXICAN PIZZA
INGREDIENTS
8 Old El Paso™ Stand N’ Stuff flour tortillas
2 medium cans refried beans, heated
1 pound ground beef, seasoned with your favorite taco seasoning and cooked
salsa
shredded fiesta cheese
Toppings: finely diced tomato, chopped green onion, sour cream, sliced olives, chopped cilantro
DIRECTIONS
Preheat oven to 350°. Place flour tortillas on a cookie sheet. Slather the bottom of each tortilla with heated refried beans; add a large spoonful of cooked ground beef. Drizzle on some salsa and a sprinkling of cheese. Bake until the cheese is melted. Top with desired toppings.
OPEN FACE BURRITO
INGREDIENTS
8 Old El Paso™ Stand N’ Stuff flour tortillas
2 medium cans refried beans, heated
salsa
shredded fiesta cheese
Optional Toppings: shredded lettuce, diced tomato and sour cream
DIRECTIONS
Preheat oven to 350°. Place flour tortillas on a cookie sheet. Add a good amount of the heated refried beans and a sprinkling of cheese. Heat until cheese has melted. Spoon salsa over the top of the melted cheese add optional toppings.
DECORATIONS!
For this party table I went super easy…..the backdrop is three cheap tablecloths attached to each other, cut into strips tied together at the top.
The “GAME PLAY” board is a black foam board. I used chalk to write the plan on the board.
I covered the table with cheap turf and to really save money I used plain brown paper products with only the napkins having a football theme.
We had so much fun cheering on our team and enjoying all the great food!
