Happy Pumpkin Halloween Chocolate Chip Cupcakes
These Happy Pumpkin Halloween Chocolate Chip Cupcakes have a delicious caramel frosting. Perfect for a bake sale, cake walk, Halloween party or school class party.
For these Happy Pumpkin Chocolate Chip Cupcakes I used the holiday orange colored chips. So when your ghouls bite into one they can see specs of orange and dark chocolate.
Nothing is more perfect then the caramel frosting on these festive cupcakes.

Ingredients
For the Chocolate Chip Cupcakes:
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 egg
- 2 egg yolks
- 1-1/2 teaspoons vanilla extract
- 1-1/2 cup all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whipping cream
- 1 cup Halloween chocolate chips
For the Caramel Frosting:
- 1/2 cup light brown sugar, packed
- 1/2 cup whipping cream
- 1 cup plus 2 tablespoons butter, softened and divided
- 5 cups confectioners' sugar
- black and orange sprinkles
Instructions
For the Chocolate Chip Cupcakes:
- Preheat oven to 350 degrees.
- Line 12 muffin cups with cupcake liners.
- Beat butter until fluffy.
- Add sugar, beat on high for 1 minutes.
- Add egg, egg yolks and vanilla extract; beat until combined.
- In a medium bowl combine the flour, baking powder and salt.
- Stir together.
- Alternately add flour mixture and whipping cream to butter mixture, beating on low speed after each addition just until combined (batter will be thick).
- Fold in chocolate chips.
- Spoon batter into prepared muffin cups, filling each about three-fourths full.
- Use the back of a spoon or off set spatula to smooth out batter in cups.
- Bake 20 to 23 minutes or until a wooden toothpick inserted into the center comes out clean.
- Cool completely on a wire rack.
- Pipe on the Caramel Frosting and sprinkle with Halloween sprinkles.
For the Caramel Frosting:
- In a small saucepan, combine brown sugar, cream and 2 tablespoons butter.
- Cook over medium heat, stirring frequently, until sugar dissolves.
- Remove from heat, and cool completely.
- In a large bowl, beat remaining 1 cup butter and brown sugar mixture at medium speed until creamy.
- Gradually add confectioners' sugar, beating until smooth.
Notes
NOTE: Double the cupcake recipe to match the amount of frosting.
