Huevos Rancheros
Huevos Rancheros | This popular Mexican style mid day breakfast is fast and easy to make but packs a huge punch of flavor. Serve it up with refried beans and Mexican style rice for a complete breakfast or simply add sliced avocado. Which ever way you decide to serve it you can’t go wrong with a fried egg served upon a lightly fried corn tortilla, topped with a tomato chili sauce!
Serve something different this weekend and start the fiesta early! This dish is so easy to make and has tons of flavor. The salsa is quite tasty. Huevos Rancheros
Ingredients
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes
- 1 to 2 canned chipotle chile pepper in adobe sauce, chopped OR 1 (4 ounce) can diced green chile peppers
- 2 tablespoonc fresh cilantro, chopped
- 1/4 teaspoon ground cumin
- 5 (6 inch) corn tortillas
- 3 tablespoons vegetable oil
- 8 large eggs
- 1/2 cup Monterey Jack cheese shredded or brumbled queso fresco
- green onions, chopped
Instructions
For The Salsa:
Add onion and garlic to the skillet; cook over medium heat for 2 to 3 minutes or until tender. Stir in tomatoes, chile peppers, cilantro, and cumin. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Transfer mixture to a blender or food processor. Tear *1* corn tortilla into pieces; add to blender or food processor. Cover; blend or process until mixture forms a coarse puree. Keep warm.
For the Tortillas:
In a large skillet, heat oil. Dip remaining 4 tortillas, one at a time, into oil just until hot. Drain on paper towels (do not stack)
To Serve:
Place a warm tortilla on each of four serving plates. Top each with two fried eggs. Spoon warm salsa over eggs; sprinkle with cheese and garnish with green onions.
