Huevos Rancheros | This popular Mexican style mid day breakfast is fast and easy to make but packs a huge punch of flavor. Serve it up with refried beans and Mexican style rice for a complete breakfast or simply add sliced avocado. Which ever way you decide to serve it you can’t go wrong with a fried egg served upon a lightly fried corn tortilla, topped with a tomato chili sauce!
Serve something different this weekend and start the fiesta early! This dish is so easy to make and has tons of flavor. The salsa is quite tasty. I used the leftovers for chips and salsa before dinner. Did you know you can make refried beans in a slow cooker or instant pot?
