How to Make Overnight Pineapple Upside Down Cake Oats

Swerve brown sugar, packed
light vanilla yogurt
old fashioned oats
unsweetened vanilla almond milk
vanilla extract

maraschino cherries, sliced in half

Ingredients
Regular Version:
- 1 (20 ounce) can pineapple chunks, drained
- 3 tablespoons light brown sugar, packed
- 12 ounces vanilla yogurt
- 1-1/3 cups old fashioned oats
- 1¼ cups milk
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 tablespoon chia seeds
- 1 tablespoon flaxseeds
- 10 maraschino cherries, sliced in half
Weight Watchers Version: 3 POINTS
- 1¼ cup fresh pineapple chunks
- 3 tablespoons Swerve brown sugar, packed
- 12 ounces light vanilla yogurt
- 1-1/3 cups old fashioned oats
- 1¼ cups unsweetened vanilla almond milk
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 tablespoon chia seeds
- 1 tablespoon flaxseeds
- 10 maraschino cherries, sliced in half
Instructions
- In a medium microwave safe bowl heat the pineapple and brown sugar one minute or until the sugar is dissolved.
- In a large bowl add the yogurt, oats, milk, vanilla, salt, seeds and pineapple mixture; stir to combine.
- Spoon half of the mixture into 5 half pint jars; drop 2 cherry halves on top.
- Add the remaining oatmeal mixture to each jar and top with another 2 cherry halves.
- Cover with lid and store in the refrigerator up to a week.

This happened to me too, I used fresh pineapple, no sugar, and plain yogurt but added vanilla and almond extract. The next day it’s sour and bitter. I make overnight oats all the time but have never used pineapple or yogurt. So weird and such a let down since I made 4 jars for the week 🙁
It must have something to do with the fresh pineapple Ashley. I only use canned and this has never happened to me. I’m sorry you lost all that oatmeal. This is one of my favorite recipes. I hope you will try it again with canned pineapple.

Made these again tonight. So delicious!! Love love love! I used plain yogurt since that’s all i had and added lil extra vanilla. Came out so good. Any idea of the calorie intake? Thanks for sharing : )

I can’t say enough how good this is! The cherries really make the whole thing for me, which is a bit strange since last time I had the actual cake (it has been years) I was really unhappy with the cherries… Anyway, I’m trying to replace the yogurt with vanilla protein powder since I already eat yogurt every breakfast and I don’t adapt well to change. I wasn’t completely satisfied with what I got this week (just using 1 T) so I guess I’ll just have to try again next week! Aw shucks. (Those cherries would end up sitting in my fridge forever otherwise, too.) Thanks so much for the recipe! I’ll let you know how next week’s version goes.

Great Recipe! Really liked it. I used unsweetened almond milk for the milk. Calculated this recipe for weight watchers freestyle. It was 8 points per serving, if you divide it into 5 servings like the recipe calls to.
