Praline Cupcakes

For the Praline Cupcakes

  • 1 cup unsalted butter, softened
  • 2 cups firmly packed brown sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 (8 ounce) package toffee bits (reserve 1/4 cup for garnish)

For the Praline Frosting

  • 1/2 cup firmly packed dark brown sugar
  • 1/2 cup heavy whipping cream
  • 2 tablespoons unsalted butter
  • 1 cup unsalted butter, softened
  • 5 cups confectioners' sugar


    For the Praline Cupcakes:

    1. Preheat oven to 350 degrees.
    2. Line muffin pans with 30 paper liners.
    3. In a large bowl, beat butter, brown sugar, and vanilla at medium speed with a mixer until fluffy. Add eggs, one at a time, beating well after each addition.
    4. In a medium bowl, combine flour, baking powder and salt.
    5. Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture, beating just until combined after each addition; stir in toffee bits.
    6. Spoon batter into prepared muffin cups, filling two-thirds full.
    7. Bake for 16 to 20 minutes or until a wooden pick inserted in center comes out clean.
    8. Cool in pans for 10 minutes; remove cupcakes from pans, and cool completely on wire racks.
    9. Spread or pipe Praline Frosting over cupcakes.
    10. Garnish with toffee bits, if desired. Store cupcakes, covered, in refrigerator up to 3 days.

    For the Praline Frosting:

    1. In a small saucepan, combine brown sugar, cream and 2 tablespoons butter.
    2. Cook over medium heat, stirring frequently, until sugar dissolves.
    3. Remove from heat, and cool completely.
    4. In a large bowl, beat remaining 1 cup butter and brown sugar mixture at medium speed with a mixer until creamy.
    5. Gradually add confectioners' sugar, beating until smooth.
