Toasted Coconut and Chocolate Chip Oatmeal Cookies

Add these to your holiday cookie tray!


  • 3/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 1 cup light brown sugar, packed
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups chocolate chips
  • 1 cup toasted shredded sweetened coconut
  • 2 cups rolled oats


Preheat oven to 375°.  Beat butter for 30 seconds until creamy.  Add the eggs, extracts, and sugar.  Mix well.  In a small bowl whisk together the flour, baking powder, baking soda and cinnamon.  Add flour mixture to butter mixture, beat just until combined.  Fold in the chocolate chips, coconut and oats.  Use an ice cream scoop and place mounds of cookie dough on baking sheet lined with parchment paper.  Press down each scoop just a bit.  Bake for 15 to 18 minutes.
