Blueberry Lemon Breakfast Cake
There is something extra special about a cake that feels just as right on a quiet weekday morning as it does on a weekend brunch table. This blueberry lemon breakfast cake is exactly that kind of recipe. Soft, buttery, and baked in a beautiful Bundt pan, it has just enough sweetness to feel like a treat while still being perfectly acceptable to slice with your morning coffee.
This is the kind of cake I love to keep on the counter during blueberry season. The crumb is rich thanks to butter and sour cream, gently scented with lemon zest, and finished with just a hint of nutmeg and cinnamon. Swirled through the batter is a homemade blueberry sauce that bakes into little pockets of jammy goodness. Once cooled, the cake is topped with a simple lemon glaze and finished with dried blueberries for a pop of color and extra flavor.

A homemade blueberry swirl runs through the cake, creating pockets of jammy fruit in every slice, then it is finished with a simple lemon glaze and a sprinkle of dried blueberries for a beautiful, flavorful finish. - 1 ¼ teaspoons cinnamon
- 1 teaspoon baking powder
- ¾ teaspoon salt
- ½ teaspoon nutmeg
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons finely shredded lemon peel, divided
- 1 cup sour cream
- 2½ pints of fresh blueberries, divided
- ¼ cup granulated sugar
- 1½ tablespoons cornstarch
- 1 teaspoon ground cinnamon
- ¼ cup water
- ¾ cup powdered sugar
- 1 to 2 tablespoons lemon juice
- ¼ cup chopped sweetened dried blueberries
LEMON BLUEBERRY BREAKFAST CAKE INSTRUCTIONS
- Preheat oven to 350℉. Grease and flour a 10-inch fluted tube pan or an 8-inch tube pan. I like using a nonstick spray with flour already in it.
- In a large bowl, whisk together flour, cinnamon, baking powder, salt, and nutmeg.
- In a large mixing bowl, beat the butter and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Beat in 1 tablespoon finely shredded lemon peel.
- Alternately add flour mixture and sour cream, beating on low speed after each addition just until combined.
- Stir together one cup of the blueberry sauce and the remaining 1 tablespoon of the finely shredded lemon peel. Spread one-third of the batter into the prepared pan.
- Carefully spread half of the blueberry mixture over the batter. Repeat layers. Spread remaining batter over top.
- Using a knife, gently swirl the batter and the blueberry mixture. Do not overmix.
- Bake for 45 to 55 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes on a wire rack. Remove cake from pan; cool thoroughly on a wire rack.
BLUEBERRY SAUCE INSTRUCTIONS
- In a medium saucepan, combine 2 pints of the blueberries, sugar, cornstarch, cinnamon, and water.
- Heat until the sugar is dissolved and the mixture is slightly thickened.
- Using a potato smasher, smash the blueberries.
- Remove the berries from the heat and gently stir in the remaining ½ pint.
LEMON GLAZE INSTRUCTIONS
- Combine the powdered sugar and lemon juice.
- Stir in additional lemon juice until icing reaches drizzling consistency.
- Drizzle icing over the cake.
- Sprinkle with the dried blueberries.
Ingredients That Make This Cake Special
Each ingredient in this cake has a purpose, and together they create something truly cozy and comforting.
- Butter gives the cake its rich flavor and soft texture. I always use real butter for baking because the flavor simply cannot be replaced.
- Sour cream adds moisture and a subtle tang. It also helps create a dense but tender crumb that works beautifully in a Bundt cake.
- Lemon zest is where all that bright citrus flavor comes from. Zesting the lemon directly into the sugar helps release the oils and gives the cake a fresh lemon aroma.
- Nutmeg and cinnamon are used sparingly, just enough to add warmth and depth without overpowering the lemon and blueberry flavors.
- Blueberries are cooked down into a simple homemade sauce, which is then swirled into the batter. This keeps the berries from sinking and creates ribbons of blueberry throughout the cake.
- A lemon glaze finishes the cake with a sweet, tangy topping that seeps into the crevices of the Bundt, adding the perfect final touch.
- Dried blueberries are sprinkled on top for texture, color, and an extra burst of blueberry flavor.

Homemade Blueberry Sauce Shortcut
This version of my blueberry lemon breakfast cake is perfect for those mornings when you want something homemade and cozy but just a little quicker. Instead of making a blueberry sauce from scratch, you can substitute store-bought blueberry jam to create that beautiful swirl right inside the cake. It saves time without sacrificing flavor, and the result is still a tender, bakery-style Bundt cake that feels extra special.
The combination of butter, sour cream, lemon zest, and a hint of nutmeg and cinnamon gives this cake a rich, softly spiced crumb. Swirling blueberry jam through the batter creates pockets of sweet fruit flavor in every slice, and a simple lemon glaze with dried blueberries on top finishes it off beautifully.
This is a wonderful make-ahead breakfast cake, perfect for brunch, holidays, or an easy treat with your morning coffee.
Tips for Using Blueberry Jam
Use a thick, good-quality blueberry jam for the best results. If your jam is very stiff, warm it slightly to make it easier to swirl. Seedless jam creates cleaner swirls, but regular jam works just fine if that is what you have on hand. Do not over swirl. Gentle ribbons of jam will give you the prettiest slices and the best texture.

Why You Will Love This Blueberry Lemon Breakfast Cake
This cake is all about balance. The lemon is bright but not overpowering, the blueberries are sweet and slightly tangy, and the warm spices add depth without turning it into a spice cake. Baking it in a Bundt pan makes it look impressive with very little effort, which is always a win in my book.
The sour cream is the secret to the tender crumb. It adds moisture and richness, making the cake stay soft for days. The blueberry swirl adds both flavor and visual interest, so every slice looks as good as it tastes.
This is the kind of recipe that works for so many occasions. Serve it for breakfast, brunch, or dessert. It is lovely on a holiday morning, perfect for guests, and wonderful to have tucked away in the freezer for later.
Serving Suggestions
This blueberry lemon breakfast cake is wonderful served slightly warm or at room temperature. I love it with a cup of coffee or tea in the morning, but it is just as nice as an afternoon snack.
For brunch, serve it alongside fresh fruit, yogurt, or scrambled eggs. If you are serving it as dessert, a dollop of lightly sweetened whipped cream is lovely.
How to Store Blueberry Lemon Breakfast Cake
- Room-temperature storage works well if you plan to enjoy the cake within 2 days. Keep it covered to prevent it from drying out.
- For longer storage, refrigeration is a good option. The cake will stay fresh for up to five days when stored in an airtight container in the refrigerator. Bring slices to room temperature before serving for the best texture.
- This cake also freezes beautifully. Wrap individual slices or the entire cake tightly in plastic wrap, then place in a freezer-safe bag or container. Freeze for up to three months.
- To defrost, let the cake thaw overnight in the refrigerator or for a few hours at room temperature. Glaze can be added after thawing if you prefer a fresh look.
Recipe Variations
This recipe is very adaptable, which makes it even more appealing.
- You can swap the blueberries for raspberries or blackberries for a different berry flavor.
- Orange zest can be used in place of lemon for a softer citrus note.
- Greek yogurt can be substituted for sour cream if that is what you have on hand.
- A crumb topping can be used instead of a glaze for a more traditional coffee-cake feel.

Yes, frozen blueberries work perfectly. There is no need to thaw them before making the sauce.
The Bundt pan is recommended for this recipe because of the amount of batter and the swirl, but a tube pan can also work. Adjust baking time as needed.
These spices add warmth and depth, enhancing the lemon and blueberry without overpowering them.
Absolutely. This cake tastes even better the next day once the flavors have had time to meld.
Make sure to thoroughly grease and flour the pan, getting into all the crevices. A baking spray with flour also works well.
Yes, the cake is delicious on its own, but the glaze adds a nice lemony sweetness.
The sauce should be thick enough to hold its shape on a spoon but still soft enough to swirl easily.
You can, but keep in mind it may add extra moisture. The swirl alone provides plenty of blueberry flavor.
Yes, it is lightly sweet but still satisfying as a dessert, especially with the glaze.
At room temperature for two days, in the refrigerator for up to five days, or frozen for up to three months.
This recipe is best made as written. Doubling may affect mixing and baking times.
A short burst in the microwave, about 10 to 15 seconds, works well to gently warm the cake.
