Layered Pumpkin Marshmallow Chocolate Mousse | This mousse is an easy to make, no bake dessert. They’re light and fluffy, and the perfect end to a heavy, holiday meal.
While at Walmart, I was thinking about the holidays and what new dessert I wanted to make this year. Naturally, I had to grab a can of LIBBY’S® 100% Pure Pumpkin, 15 oz and NESTLE® CARNATION® Evaporated Milk, 15 oz. Not only do I love LIBBY’S® because it’s 100% natural and pure, and packed with vitamin A, but it’s a staple in holiday baking! Perfect in both sweet and savory dishes. I know I can always use NESTLE® CARNATION® Evaporated Milk to make my pumpkin dessert rich and creamy.
I still wasn’t quite sure what I was going to make, so when I saw NESTLE® TOLL HOUSE® Pumpkin Spice Morsels, I HAD TO HAVE THEM! Nothing says fall like pumpkin spice and these morsels are sure to add the perfect amount of pumpkin spice goodness to those delicious fall desserts. Now that I had all the good stuff, I had to decide what to make. I knew I wanted to make something pumpkin, because you just have to have pumpkin during the holidays. I also knew I wanted to serve something that wasn’t too heavy following a big holiday dinner.
This Layered Pumpkin Marshmallow Chocolate Mousse is a light and fluffy mousse with a layers of creamy chocolate, marshmallow, and pumpkin. This dessert is full of pumpkin spice flavor we all can’t get enough of this time of year.
Layered Pumpkin Marshmallow Chocolate Mousse
Ingredients
*For the Chocolate Layer:*
- 2 (8 ounce) Cool Whip
- 3.9 ounce chocolate fudge pudding mix
*For the Marshmallow Layer:*
- 7 ounce jar marshmallow fluff
- 1/2 cup butter, softened
- 1 cup confectioners sugar
- 1/2 teaspoon vanilla extract
- plus (optional) 1 vanilla bean, scrap out seeds
- 1 cup mini marshmallows
*For the Pumpkin Layer:*
- 1 (15 ounce) can LIBBY'S® 100% PURE PUMPKIN
- 2 ( 3.4 ounce) boxes cheesecake pudding mix (dry)
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
Instructions
*For the Chocolate Layer:*
- In a large bowl mix together the cool whip and pudding mix until well combined.
- Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag.
*For the Marshmallow Layer:*
- Beat together the marshmallow cream, butter, sugar and vanilla until fluffy.
- Fold in marshmallows.
- Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag big enough to allow the marshmallows to pass through.
*For the Pumpkin Layer:*
- Mix together the LIBBY'S® 100% PURE PUMPKIN, pudding, pumpkin pie spice and salt until combined.
To Put It All Together:
- Scoop each filling into a separate large zip top bag, snip off a corner of the bag and fill containers starting with the chocolate then the marshmallow and top with the pumpkin.
