Caramel Apple Bread Pudding | Serve up a big serving of comfort food at your next holiday breakfast, breakfast buffet or brunch!  This delicious bread pudding is chalked full of crispy apples, chunks of fluffy Challah bread and wonderful Caramel Macchiato creamer.   When having dessert for breakfast is completely acceptable!  The great thing about bread pudding is…IT’S DELICIOUS AT ANY TEMPERATURE!

Do you know or have you seen Challah bread?  Challah bread is an egg based bread and is the perfect companion to bread pudding.  If you can’t find Challah bread then using French bread will work too.  I get my bread from Beyond Bread, they make the most beautiful Challah bread.

Drive the caramel flavor home by adding some of my EASY CARAMEL SAUCE.  If you don’t want to make your own you can also use store bought caramel ice cream topping.  But why would you?  😀

Bread Pudding is one of my favorite breakfast items.  I was first introduced to bread pudding during one our trips to Hawaii.  As you can imagine I quickly fell in love with it.

Caramel Apple Bread Pudding

Preparation 30 minutes 2017-10-19T00:30:00+00:00 Cook Time 1 hour 10 minutes 2017-10-19T01:10:00+00:00 Serves 12     adjust servings

 

Ingredients

  • 14 cups, or 1 large loaf of Challah bread, cut into bite size cubes
  • 8 large eggs
  • 1 (32 ounce) bottle Caramel Macchiato Creamer
  • 1 1/3 cups ligh brown sugar, packed
  • 4 teaspoons vanilla
  • 1 1/2 cups unsalted butter, melted and cooled
  • 2/3 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 large apples, cored, peeled, chopped into slices or chunks
  • 1 cup raisins
  • 1 cup pecans, chopped
  • 1/2 cup easy caramel sauce (link below) or store bought caramel ice cream topping

Instructions

Preheat oven to 350°.  Place rack in the middle of the oven.  Spray a 9x13-inch baking dish with non stick cooking spray.  Place the bread cubes in a large mixing bowl; set aside.  In a medium bowl whisk the eggs to break them up, add the and add the creamer, brown sugar, vanilla, and butter.  Whisk together until combined.  In a separate bowl, combine the flour, baking powder and salt.  Stir this mixture into the bread cube mixture and then fold in the apples, raisins, nuts and caramel sauce.  Pour into prepared baking dish.  Bake covered with foil for 30 minutes, uncover and bake an additional 45 minutes or until fluffy and golden brown.  Place on a wire rack to slightly cool.  Serve warm. Optional.....caramel drizzle.

      Yes, you can bake this in a larger pan. I think it will fit into a 9X13. Once you’ve made the recipe it will help you judge better on the size. But I think there is enough bread pudding to fill the larger size. Good Luck! You are going to LOVE this Bread Pudding. My family did! 🙂
