Coconut Cream Cheese Frosting Recipe
1/3 cup butter, softened
2 ounces cream cheese, softened
16 ounces confectioners sugar
4 teaspoons milk
1/2 teaspoon vanilla
2 cups coconut
Cream together butter and cream cheese. Add sugar alternating with milk, beating well after each addition. Add vanilla. Spread frosting on cupcakes or pipe on cupcakes. Leave flat to allow room for your coconut. Put the 2 cups of coconut into a Ziploc bag, drop in food coloring, close bag and rub with hands to blend in color. If you’re not happy with the color add more food coloring or if the color is too dark add more coconut. Top each cupcake with colored coconut. Make a well and add the jelly beans.
