Instead of making the traditional popcorn ball recipe add a little something different to the mix! Ground up brittle!
Most grocery stores now have already made brittle usually found in the produce department next to the specialty packed nuts, fruit and candy. I grind up the nuts and all. It adds so much depth to the already delicious popcorn ball.
Unlike the traditional popcorn ball recipe this one doesn’t require a candy thermometer or corn syrup and can be made in the microwave. If you think making rice kripsy treats is easy then you are going to love this recipe! These Peanut Brittle Mini Popcorn Nuggets are made with melted butter, marshmallows, blended peanut brittle, vanilla, popcorn and fun colorful sprinkles. They are chewy and not hard which makes them easy to eat!

- 1 (12 ounce) package store bought peanut brittle
- 15 cups microwave popped popcorn
- 1 (10 ounce) bag mini marshmallows
- ¼ cup unsalted butter
- 2 teaspoons vanilla extract
- ¼ cup red, white and blue sprinkles
For the Peanut Brittle:
Pour peanut brittle into a blender. Blend until the brittle is dust; set aside.
For the Mini Popcorn Nuggets:
Pop the popcorn and measure out 15 cups into a large bowl; set aside. Pour marshmallow and butter into a large microwave safe bowl. Heat on high 30 seconds, stir. Continue heating in 30 second intervals until almost melted (about 1 minute). Add the crushed peanut brittle to the marshmallow mixture, stir. Heat an additional 30 seconds. Stir in vanilla. Pour over popcorn, stir to combine. Add sprinkles, stir again. Form into small balls. Store at room temperature.
TIP: Wait until most of the melted marshmallow has coated the popcorn and then add the sprinkles. The heat of the melted marshmallow will release the coloring from the sprinkles (if using non pariels).
