White Chocolate Mini Peppermint and Milk Chocolate Caramel Pretzel Sticks
Ingredients
For the Peppermint Pretzel Dippers:
- 1 (10 ounce) bag white candy melts
- peppermint candy, crushed
- 40 Pretzel Dippers
For the Caramel Coated Milk Chocolate Pretzel Dippers:
- 1 (10 ounce) bag milk chocolate wafers ( I used Ghirardelli)
- 1 (11 ounce) bag caramel bits
- 1 cup red melting wafers
- 1 cup white melting wafers
- 1 cup dark green melting wafers
- 1 cup light green melting wafers
- sprinkles
For the Caramel Coated Spiral Milk Chocolate Pretzel Dippers:
- 1 (10 ounce) bag milk chocolate wafers ( I used Ghirardelli)
- 40 wrapped Kraft caramels
- sprinkles
Instructions
For the Peppermint Coated Pretzel Dippers:
- Line a baking sheet with parchment paper and set it aside.
- Pour candy melts into a medium microwave-safe bowl. Heat in 30-second increments; stir between heats. Heat until melted and creamy.
- Dip or spoon melted candy over the pretzels. While the candy is still wet, sprinkle the crushed peppermint candy over the melted candy.
- Place on a prepared baking sheet to harden.
For the Caramel Coated Milk Chocolate Dippers:
- Line a cookie sheet with parchment paper.
- Heat the caramel in two batches, one at a time.
- Add ½ cup of the caramel bits to a medium microwave-safe bowl, along with one teaspoon of water.
- Heat 35 to 40 seconds (the caramel should be bubbly and melted). Stir to combine. While the caramel is hot, spoon it over the pretzels and place them on the prepared cookie sheet. Once the prezels are coated, (If there is a caramel puddle). You can go back to them and shape them. Start with the first ones that were coated; they will have cooled down the most.
- Continue with the next batch of caramel and instructions.
- Now that the pretzels have their caramel coating, they can be covered with the milk chocolate.
- Pour chocolate into a medium-sized microwave-safe bowl. Heat in 30-second increments; stir between heats. Heat until melted and creamy.
- Dip or spoon melted candy over the pretzels. If adding sprinkles, add them now while the candy is still wet.
- Place coated pretzels on the prepared cookie sheet.
- If adding multi-colored drizzle, set the pretzels on the parchment paper to harden.
- While the coated pretzels are hardening, prepare the drizzle.
- The number of colors is optional. I used 4, which was a lot for these little pretzels. Three colors might be better, but the choice is totally optional.
- I RECOMMEND coating all the pretzels with caramel and candy BEFORE starting the drizzle portion of the decorating. That way, one color can be added to all the pretzels at once, without worrying about the candy hardening before the task is finished.
- Pour colored melting wafers into a medium microwave-safe bowl, heat for 1 minute, and stir to finish melting the candy until it is creamy.
- Pour melted candy into a squeeze bottle, piping bag, or zip-top bag. If using a piping or zip-top bag, snip the corner. In a back-and-forth motion, add the color to all the chocolate-coated pretzels. Once one color is finished, move on to the remaining colors in the same way as the first.
- Set the drizzled pretzels on a cookie sheet lined with parchment paper to harden.
For the Caramel Coated Spiral Milk Chocolate Pretzel Dippers:
- Remove the wrapper from one craft caramel.
- Place the caramel in a small microwave-safe bowl. Heat for 10 seconds.
- Carefully handle the caramel. Some spots will be hotter than others. Mold the caramel into a ball, then roll it between your hands to form a snake about 3½ inches long.
- Starting at the top of the pretzel, wrap the caramel around the pretzel dipper.
- Set aside on a cookie sheet lined with parchment paper, while the remaining pretzels are being wrapped.
- Once all the pretzels are wrapped, it's time to coat them with chocolate. Pour chocolate into a medium-sized microwave-safe bowl. Heat in 30-second increments; stir between heats. Heat until melted and creamy.
- Dip or spoon melted candy over the pretzels. TIP: Make sure the chocolate is in all the areas where the caramel spiral was added. Add the sprinkles while the candy is still wet. Set aside on the prepared cookie sheet to harden. MAKES 40 PRETZEL DIPPERS PER TYPE ????MERRY CHRISTMAS!????
