How to Make a Thick Soft Brown Butter Cookie: Tips and Tricks

If you’ve ever wondered how bakeries get those thick, soft brown butter cookies with perfectly chewy centers and golden edges, the secret is all in the technique. Browning the butter adds rich, nutty flavor, but how you mix, chill, and bake the dough makes all the difference. Follow these simple tips and tricks to help your brown butter cookies turn out thick, soft, and absolutely irresistible every time.
- SHORTENING: Shortening traps more air bubbles and has a higher melting point than butter. As a result, recipes that use shortening tend to produce an end product that rises slightly higher, retains its shape during baking, and has a softer or lighter interior texture.
UNSALTED BUTTER: For flavor, a little fat and a tiny bit of liquid.
CREAM CHEESE: (secret ingredient) Swapping out some of the butter for cream cheese will create a soft, cloud-like cookie.
BAKING POWER: Baking soda can make cookies crisper, but we want thick, soft cookies, so omit it and use baking powder instead.
HANDLING THE DOUGH: When forming the cookie ball, don’t press the dough together too much. Try to keep it airy. Press it together just enough to hold.
CHILL THE DOUGH BEFORE BAKING: Once the dough is formed into balls and placed on a cookie sheet lined with parchment paper, slide the cookie sheet into the refrigerator for 2½ hours.
BUTTER VS MARGARINE
Don’t skimp on this ingredient….YOU MUST USE REAL BUTTER. WHY? There are several reasons for choosing butter over margarine.
- FLAVOR: Butter provides a rich flavor. BAKER’S TIP: Always use unsalted butter when baking. You want to control the amount of salt in your recipe.
- FAT CONTENT: Margarine contains more water and less fat, resulting in thin cookies that spread out during baking.
HOW TO TRANSFORM THESE LARGE BAKERY COOKIES INTO SMALL COOKIES
- LEAVE THE DOUGH IN THE MIXING BOWL and refrigerate for 2 hours. Use a cookie or ice cream scoop (about 2 ounces) to scoop the cookie dough onto cookie sheets lined with parchment paper. Form into balls. You should get close to twice as many cookies.
- Bake in a preheated oven at 350°F for 11 minutes. Use the back of a wooden spoon to gently flatten the cookies, and continue baking for an additional 2 minutes.

How to Store Brown Butter Cookies
YES! You can easily make this dough ahead of time and store it in the refrigerator or freezer.
REFRIGERATOR: The sugar cookie dough can be kept chilled in the refrigerator for up to 4 days.
FREEZER (BAKED COOKIES): Place baked cookies in a freezer-safe bag. They will stay fresh in the freezer for up to three months.
FREEZER (COOKIE DOUGH BALLS): Cookie dough balls will stay fresh in the freezer up to 3 months. HOW TO FREEZE: Place the balls on a cookie sheet for a few hours before placing them in a freezer bag to store. BAKE FROZEN COOKIE DOUGH FOR AN EXTRA MINUTE, no need to thaw.
Recipe Enhancers

While using these flavors is not necessary, they do add a depth of flavor to your desserts.

Gourmet Brown Butter Cookies with Eggnog Fudge Centers-FAQ
Browning the butter gives the cookies a rich, nutty flavor that adds depth and makes them taste gourmet. It’s a simple step that transforms a regular cookie into something truly special.
Yes! Chilling allows the butter to solidify again, helping the cookies bake up thick and chewy instead of flat and crumbly. It also gives the flavors time to deepen.
Absolutely. You can prepare the fudge up to 3 days in advance and store it, covered, in the refrigerator. Warm it slightly before spooning it into freshly baked cookies.
You can replace the eggnog fudge with white chocolate ganache, caramel, or vanilla frosting for a creamy center without the eggnog flavor.
Yes. Freeze the baked cookies without the fudge center for up to 2 months. Thaw and add fresh fudge before serving for the best texture and flavor.
Overly warm dough or too little flour can cause spreading. Ensure your browned butter has cooled and is slightly solidified before mixing, and that the dough chills for at least 2 hours before baking.
These cookies are thick if refrigerated properly before baking, and then baked until slightly underbaked; they will stay soft for days. Also, store them in an airtight container.
Now that you know all the secrets to making thick, soft brown butter cookies with creamy eggnog fudge centers, it’s time to grab your mixing bowl and start baking! WHY DO THESE COOKIES LOOK “RAW”?
If you’re wondering why the inside of these cookies looks a little “doughy,” don’t worry—they’re fully baked! That’s the magic of a true bakery-style cookie. These cookies are made to be extra thick and chewy, so the centers stay soft while the edges are set and golden. The result is a melt-in-your-mouth texture that might look underdone at first glance but is actually perfectly baked.
Pro Tip: The cookies will continue to set as they cool, so resist the urge to overbake—otherwise, you’ll lose that irresistible soft and chewy center.

Instructions
How to Make Brown Butter:
An easy way to add a caramel/nutty flavor to your dish. Whether that’s for baking or something savory.
- I used 2 cups of unsalted butter, browned it, and ended up with 1¼ cups, which is exactly what I needed for this recipe. In a small saucepan, bring the butter to a boil over medium-high heat, stirring constantly (about 5 to 6 minutes).
- Once butter starts to foam, you know you're close (like 30 seconds close).
- Use the spoon to gently pull away the top layer (foam) of the butter. When the butter has reached a caramel color, it is done. Pour into a jar and let it cool on the counter. Place a lid on and store in the refrigerator. Let the butter slightly solidify before using it in the cookie dough.
For the Gourmet Brown Butter Cookies:
- In a large mixing bowl, add the softened brown butter, vegetable shortening, cream cheese, brown sugar, granulated sugar, eggs, and optional English Toffee LorAnn flavored oil. Mix until combined
- In a separate medium bowl, whisk together the flour, salt, baking powder, cinnamon, and nutmeg.
- Add the dry mixture to the wet mixture. Using a paddle attachment, beat the mixture until it forms a dough.
- Line two baking sheets with parchment paper.
- Measure out the dough into 12 (3.7-ounce) cookie dough mounds. Place the mounds of dough on the cookie sheets. Refrigerate for at least 2 hours.
- Preheat the oven to 350℉. Bake for 20 minutes. While the cookies are still hot, use the back of a tablespoon to make a dent in the top of each cookie. Cool completely before adding the eggnog fudge.
For the Eggnog Fudge Center Topping:
- In a large microwave-safe bowl, add the chocolate chips, condensed milk, butter, nutmeg, and cinnamon.
- Microwave for 1 minute, stir, and then microwave for an additional 30 seconds.
- Stir until creamy.
- Add a tablespoon of the fudge to the center of each cookie.
- While the fudge is still soft, garnish the top of each cookie with a pecan half.
Extra Fudge:
- Line an 8 x 8-inch baking dish with foil and spray it with nonstick cooking spray.
- Pour the warm fudge into the prepared dish and refrigerate until set. Or spray a silicone candy mold with nonstick cooking spray and spoon fudge into each section.
- For added flavor and crunch, sprinkle chopped pecans on top.
