Instant Pot Lemon Chicken |The bright flavors of summer! In no time you can have a delicious dinner on the table. This simple weeknight dinner is just what you need when time is short and you want to put a delicious meal on the table. This dish is also great for potlucks. It’s easy and yummy!
This Instant Pot Lemon Chicken is packed with lemon flavor, dill weed and a little bit of white wine. Don’t worry this dish is safe for kids. The alcohol is evaporated in the cooking process. Add some zip to your chicken salad! Swap out the thighs for chicken breasts and make it into chicken salad for the week!
- 6 chicken thighs
- 1/4 cup unsalted butter
- 1 lemon, sliced
- 1 tablespoons lemon juice
- 1 teaspoon fresh dill weed, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup white wine
- 2 green onions, chopped
Rinse and cut off any fat from the chicken thighs; pat dry. Add thighs skin side down place into the instant pot add butter and lemon slices on top. Sprinkle dill weed, salt and pepper over chicken. In a small bowl mix together the lemon juice and wind. Pour over chicken.
Tightly place on the lid. Select Meat button, high pressure. Adjust time to 8 minutes. Make sure the pressure nozzle is closed. Once the Instant Pot has come to the right amount of pressure and then cooked 8 minutes, let the chicken sit for an additional 10 minutes before releasing the pressure and removing the lid.
Sprinkle with green onion; serve over a bed of fluffy white rice and ENJOY!
