This light Brown Rice and Quinoa Salad fits just right along side a juicy burger or makes the perfect light lunch. With fresh ingredients like spinach, tomatoes and cucumbers you know this salad is not only great tasting but has tons of flavor. This salad has some characteristics of a Greek Salad with feta, olives and pepperoncinis. The great thing about the recipe (other then it’s delicious) is that you can make it your own. Don’t like feta? Leave it out! Add something you do like.

Yield: 5 cups (¾ cup each)
Brown Rice and Quinoa Salad
This delicious salad comes in at only 184 calories per serving (without the feta)!
1¼ cups cooked brown rice and quinoa
1 cup fresh spinach, torn
1 cup grape tomatoes
¾ cup black beans, rinsed and drained
½ cup cucumber, peeled, seeded and chopped
½ cup sliced pepperoncinis
½ cup pitted green olives, halved
¾ cup fat free Italian Dressing
(optional) 1½ cups crumbled feta
In a large bowl, combine the brown rice and quinoa, spinach, tomatoes, beans, cucumbers, pepperoncinis and olives. Pour ½ cup of the dressing over the quinoa mixture and toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, drizzle the remaining dressing over the salad, add the feta and toss to coat.
