Copycat Disneyland Al Pastor French Fries
Copycat Disneyland Al Pastor French Fries: French Fries like you’ve never had! Typically french fries are thought of as a side dish. Not these french fries! Crispy french fries are placed in a pool of homemade cheese sauce, then a layer of marinated slow cooked pork (Al Pastor), salsa verde, and homemade pineapple salsa. French Fry PERFECTION!
On my last trip to the Disney Parks I ordered these incredible Al Pastor French Fries. I found them at Paradise Grill in California Adventure. Since I live in Arizona I don’t get to the parks that often. So, in order to be able to enjoy these delicious french fries I knew I had to recreate the recipe. I hope you enjoy this little piece of the Disneyland Parks.

While the french fries at Disneyland were good, homemade will win every time!
Copycat Disneyland Al Pastor French Fries—Layers
THE CHEESE SAUCE
The cheese sauce offers a creamy base for the crunchy french fries and another layer of delicious flavor.
INGREDIENTS (complete printable recipe below)
- 1 quart milk
- 6 tablespoons unsalted butter
- ½ cup all-purpose flour
- 12 ounces Gruyere, grated (4 cups)
- 8 ounce sharp cheddar cheese, grated (2 cups)
- ½ tablespoon salt
- ½ teaspoon black pepper

LEFTOVER CHEESE SAUCE
The cheese sauce recipe makes 6 cups of creamy cheese sauce perfect for homemade macaroni and cheese. Boil elbow pasta according to the package instructions. Mix with leftover cheese sauce. Spoon into freezer and microwave safe containers. I used these → Clear Airtight Deli Container. Fill and freeze. When ready to eat, place the container WITH THE LID ON in the microwave. Heat 5 minutes, stir and enjoy. Stays fresh (in the freezer) up to 3 months.
THE FRENCH FRIES
I used frozen french fries and cooked them in the air fryer. OTHER OPTIONS COULD BE—frying in oil or grabbing your favorite fast food restaurant french fries. TIP: If you choose to use fast food french fries, make sure everything is ready to go, before you leave, preheat the oven to warm.

APRICOT PINEAPPLE SALSA
So incredibly in love with a good sweet and savory salsa.
INGREDIENTS (complete printable recipe below)
- 2 cups diced fresh pineapple
- 4 tablespoons red onion, finely chopped
- 1 cup apricot preserves
- ¼ cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 medium jalapeno pepper, seeded and chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper

Al Pastor Pork
A marinated pork used in tacos, burritos, and now french fries!
SLOW COOKER: The slow cooker is your best friend on busy days. Pour marinade into the slow cooker along with the pork cut into 4 pieces. Cook on high 4 hours, shred, and place back in the sauce.
GRILLED: Drain pork, discard marinade. Grill pork until done (160°)
How to Build Al Pastor French Fries
Starting with the bottom layer and working up to the top (per serving)
LAYER #1—1/3 cup Creamy homemade cheese sauce
LAYER #2—6 ounces French Fries, frozen, homemade, or fast food
LAYER #3—4 ounces Al Pastor Pork
LAYER #4—1 tablespoon Salsa Verde
LAYER #5—2 tablespoons Pineapple Salsa
OTHER TOPPING OPTIONS
While I think these Copycat Disneyland Al Pastor French Fries are perfection, and have FIVE layers of deliciousness. There are a few more toppings that would taste great if added.

QUICK SEMI HOMEMADE PARTY TRICK FOR EL PASTOR FRENCH FRIES
Even though NOTHING compares to homemade, I realize there are days when time is short and you need a recipe that can be put on the table quickly. Using these suggestions you can have everything you need in your pantry, refrigerator, and freezer ready to go at anytime. I’ll break it down into the layers.
LAYER #1: Cheese: There are a couple of ways you can achieve having a cheesy bottom depending on what you want. Creamy and cheesy or just cheesy. Using store bought nacho cheese dip will give you both the creamy texture and cheesy flavor. Adding sliced or grated cheese won’t offer as much creamy texture but you do get the option of choosing better cheese.
LAYER #2: French Fries: A bag of your favorite frozen french fries is awesome. You can also get a few orders of large french fries from your favorite fast food restaurant. TIP: Make sure the oven is on warm before leaving to pick up the french fries. That way you can keep them warm while you get everything together.
LAYER #3: Al Pastor Pork: You can purchase a chicken option at Costco. The best option is to go to your favorite Mexican Restaurant and order Al Pastor Pork to go. If using soon, store in the refrigerator. If you don’t plan on using it within a couple days, store in the freezer.
LAYER #4: Salsa Verde: I have discovered (over time) that there are a few things (believe it or not) that are just as good homemade as they are store bought. Salsa Verde is one of them.
LAYER #5: Pineapple Salsa: There are many options at your local grocery store for sweet and savory salsas. Trader Joe’s has a fantastic pineapple salsa.

Copycat Disneyland Al Pastor French Fries
Marinade the pork the day before. Easy to make, can be served as a quick meal or a party appetizer.
Ingredients
For the Cheese Sauce:
- 1 quart milk
- 6 tablespoons unsalted butter
- ½ cup all-purpose flour
- 12 ounces Gruyere, grated (about 4 cups)
- 8 ounces sharp cheddar, grated (about 2 cups)
- ½ tablespoon salt
- ½ teaspoon black pepper
For the French Fries:
- 6 ounces frozen, fresh or fast food french fries
For the Slow Cooker Al Pastor Pork:
- 1 medium fresh pineapple, peeled, cored and sliced into rings (about 8, reserved remaining for salsa)
- 1 large white onion, chopped
- ½ cup orange juice
- ¼ cup white vinegar
- 3 tablespoons vegetable or canola oil
- 3 tablespoons ground guajillo or pasilla chile pepper
- 2 teaspoons salt
- 3 cloves garlic, peeled and halved
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 3 pounds pork shoulder, cut into 4 pieces
For the Salsa Verde:
- small jar of store bought salsa verde
For the Apricot Pineapple Salsa:
- 2 cups diced fresh pineapple (leftover from the Al Pastor marinade)
- 4 tablespoons red onion, finely chopped
- 1 cup apricot preserves
- ¼ cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 medium jalapeno pepper, seeded and chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
For the Cheese Sauce:
- Heat the milk in a small saucepan, DON'T BOIL.
- Melt butter in a large (4 quart) pot and add the flour.
- Cook over low heat for 2 minutes, stirring with a whisk.
- While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth (when you feel resistance while stirring). Remove from the heat, add the cheeses, salt, and pepper. Stir until combined.
For the French Fries:
- Cook according to package instructions.
For the Al Pastor Pork:
- In a blender or food processor, combine three of the pineapple rings, the onion, orange juice, vinegar, oil, ground chile pepper, jalapeno, salt, garlic, oregano, and cumin.
- Cover and blend or process until smooth.
- Marinate in the refrigerator for at least 4 hours and up to 24 hours.
- Pour marinade into a slow cooker, add the pork and cook on high 4 hours.
- Take out of the slow cooker, remove any fat and bone, shred, and place back into the sauce. Makes 3 pounds of pork.
For the Salsa Verde:
- Spoon on top of pork.
For the Pineapple Salsa:
- In a bowl, combine pineapple, red onion, preserves, cilantro, lime juice, jalapeno, salt, and pepper. Add over salsa verde.
