These Semi-Homemade Caramel Pecan Pie Parfaits are exactly the kind of dessert I love serving during the holidays. They come together quickly, look beautiful on a dessert table, and always surprise people when they discover the secret starts with a frozen pecan pie. I hope this recipe inspires you to think outside the pie plate and create something that brings a little extra joy to your holiday celebrations.
1 (32 ounce) frozen pecan pie, thawed ( I used Marie Callender's)
8 ounces of caramel ice cream topping ( I used Ghirardelli)
1 ( 8 ounce) tub Cool Whip or frozen topping of your choice
6 toasted pecan halves
6 ( 9-ounce) plastic cups
Instructions
Dump the pecan pie (with the crust) into a large bowl. Break it up into small pieces. I used a dough cutter. TIP: If the filling is too cold, you can microwave it for 30 seconds. If it's still cold, microwave in 15-second increments until the filling is stirable.
Transfer the caramel into a small piping bag. Also transfer the Cool Whip to a large piping bag. Set aside.
In the bottom of each cup, add ¼ cup of the pecan filling. Push the filling to the edge of the cup. TIP: TO KEEP THE LAYERS, MAKE SURE THE LAYER YOU ARE ADDING TOUCHES THE SIDE OF THE CUP. THIS WILL CREATE A SEAL SO THE OTHER LAYERS CAN'T SEEP INTO THE LAYER BELOW.
Snip the corner of the piping bag with the whipped cream and pipe into the cup on top of the pecan pie filling, touching the edge of the cup. Add the caramel, touching the edge of the cup.
Add 2 tablespoons of the pecan pie filling, another layer of the whipped topping, drizzle of the caramel topping, and a toasted pecan half.
