Ingredients

For the Vanilla Cupcakes

  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 2 egg yolks
  • 1 vanilla bean, seeds removed or 1 tablespoon vanilla paste, or 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup whipping cream

For the Caramel Butter Frosting

  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/4 cup plus 2 tablespoons caramel ice cream topping
  • 2 to 3 cups confectioners sugar

For the Toppings

  • 3 (1 ounce) boxes Cracker Jacks
  • 1/2 (3.1 ounce) box Sno Caps Chocolate Candy

Instructions

    For the Vanilla Cupcakes:

    1. Line 12 muffin cups with cupcake liners.
    2. Preheat oven to 350 degrees.
    3. Beat butter until creamy.
    4. Add sugar and continue beating until combined.
    5. Add eggs and vanilla, also until combined.
    6. In a medium bowl add the flour, baking powder and salt.
    7. Mix the 1/2 teaspoon of vanilla with the whipping cream.
    8. Alternately add flour mixture and whipping to butter mixture, beating on low speed after each addition just until combined. {batter will be thick}
    9. Spoon batter into prepared muffin cups, filling each about three-fourths full.
    10. Smooth the batter,.
    11. Bake 20 minutes or until a toothpick inserted into the center comes out clean.
    12. Cool in muffin cups 10 minutes.
    13. Take out of muffin cups and cool completely on a wire cooling rack.

    For the Caramel Butter Frosting:

    1. Beat the butter until creamy.
    2. Add the vanilla and caramel ice cream topping.
    3. Beat until smooth.
    4. Add the confectioners sugar 1 cup at a time until the frosting reaches spreading or pipping consistency.

    For the Topping:

    1. Garnish with toppings.

      • Hi Anna, This is a total guess on my part since it’s been almost a year…but I think they are Christmas cupcake wrappers from Michael’s.
