Copycat Disneyland Blueberry Lemon Cheesecake Parfait
Copycat Disneyland Blueberry Lemon Cheesecake Parfait: Originally introduced for Pixar Fest and served at the Jolly Holiday on Main St USA in Disneyland. My version has a layer of graham cracker crumbs, no-bake lemon cheesecake, blueberry gelatin, a blue buttercream frosting, and is topped with a gummy shark. Perfect for a pool party, beach party, or luau.

Blueberry Lemon Cheesecake Layers

When I first saw this dessert at Disneyland, I was intrigued by the layer of jello. I had never seen jello paired with cheesecake. I couldn’t wait to try it. I thought the jello texture with the cheesecake would be weird, but I was excited to give it a try. I’m so glad I did! I loved it so much that I decided to come home and recreate my version of the sea monster friend parfait from Disneyland. The parfait was created to celebrate Disney and Pixar’s Luca. I took it in a different direction. This Ocean Water Blueberry Lemon Cheesecake Parfait reminds me of a day at the beach. With a sandy bottom, foamy shore water, and beautiful blue water. The perfect beach party dessert!

How to Make Blueberry Lemon Cheesecake Parfaits




This easy-to-make no-bake cheesecake parfait recipe is super easy to make, looks amazing, and tastes incredible!
BLUEBERRY LEMON CHEESECAKE INGREDIENTS LIST-full printable recipe below in recipe card
GRAHAM CRACKER LAYER INGREDIENTS
- 1 cup graham cracker crumbs
NO BAKE LEMON CHEESECAKE LAYER INGREDIENTS
- 1 (8-ounce) block of cream cheese, softened
- 1 (8-ounce) tub Cool Whip, thawed
- 2 cups powdered sugar
- lemon zest from 1 lemon
BLUEBERRY JELLO LAYER INGREDIENTS
- 1 (3-ounce) box berry blue Jello mix
- 1 cup hot water
- 1 cup cold water
BUTTERCREAM FROSTING INGREDIENTS
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- ½ tablespoon water
- blue gel food coloring
- Optional: Gummy Sharks
FOR THE GRAHAM CRACKER LAYER:
- Spoon 2 tablespoons of graham cracker crumbs into the bottom of each jar.
FOR THE NO-BAKE LEMON CHEESECAKE LAYER:
- In a large mixing bowl, add the cream cheese and Cool Whip.
- Mixture until combined and fluffy.
- Add the powdered sugar, lemon zest, and lemon juice to the cream cheese mixture.
- Mix until combined and fluffy.
- Transfer the filling to a large piping bag, snip the end to prevent it from spilling, and pinch the snipped end with your fingers until the piping bag is in position to fill each jar with about 1½ inches. Keep going back to the jars until all the filling is equally disbursed.
- Place jars with the cheesecake filling in the refrigerator to harden (at least 2 hours)
FOR THE BERRY BLUE JELLO LAYER:
- While the cheesecake layer is hardening, make the jello. Into a medium bowl, add the jello powder. Pour hot water over the powder and whisk until dissolved. Pour cold water over the jello mixture, whisk to combine.
- Cover the bowl with plastic wrap and set aside to come to room temperature (about 1-2 hours, depending on the kitchen temperature).
- Once the cheesecake layer has hardened, spoon about 2 tablespoons of jello on top. Add lid and refrigerate overnight.
FOR THE BUTTERCREAM FROSTING LAYER:
- The next day, add the frosting.
- Place butter into a large mixing bowl fitted with a paddle attachment. Cream until light and fluffy.
- Add the vanilla, powdered sugar, water, and blue food coloring.
- Beat on low until the powdered sugar dissolves, then turn the mixer to high and beat for an additional 3 minutes. Making sure to scrape the sides of the bowl.
- Transfer to a piping bag fitted with a piping tip. Add a swirl of blue frosting on top of the Jell-O layer.
- If using a gummy shark, add the shark while the frosting is still soft.
- Cover with the lid. Store in the refrigerator until ready to serve.
- FILLS 10 (8 OUNCE) MASON JARS
PRO TIP

When adding the cheesecake filling to the jar, make sure it has contact all around the edges of the jar. This will create a seal that prevents the jello from seeping into the graham cracker crumbs. DON’T WORRY IF THIS HAPPENS—it doesn’t affect the flavor of the dessert, but it does add streaks of blue to the graham cracker layer.

How to Store Cheesecake Parfaits

For best results, store parfaits in an airtight container (mason jars work best). Parfaits must be kept in the refrigerator until ready to serve. Desserts containing cream cheese can sit out at room temperature for no longer than TWO HOURS.
How Much in Advance Can I Make These Parfaits?

The cheesecake parfaits can be made three to four days in advance. I made them on a Wednesday and served them that Saturday. There was a little bit of Jell-O syrup floating on the top, but it was not bad. It didn’t change the texture or flavor of the dessert. I was the only one who noticed.
