How to Make Barbecue Beef Stuffed Baked Potatoes


There’s nothing like a sweet, tangy sauce mixed with shredded beef and piled high on a bun. But these stuffed potatoes are way better! For easy clean-up, the beef is made in the slow cooker. Make an extra batch of beef and store in the freezer for an easy weeknight dinner. The perfect summer dinner. When it’s too hot to turn on the oven and stand outside by the grill, using your slow cooker is the way to go.
These baked potatoes are huge and I honestly I can only eat half of one.
DISNEYLAND COPYCAT BARBECUE BEEF BAKED POTATOES INGREDIENTS LIST-full printable recipe below in recipe card
BAKED POTATOES
- 4 russet baking potatoes (about 1 pound each)
SLOW COOKER BARBECUE BEEF
- 1 (2-pound) tri-tip beef roast
- ½ cup onions, chopped
- 2 garlic cloves, chopped
- ¼ cup light brown sugar, packed
- 1 teaspoon dry mustard
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups ketchup
- ¼ cup Worcestershire sauce
COLESLAW
- 1 (14-ounce) bag of coleslaw mix
- ½ cup mayonnaise
- ¼ cup granulated sugar
BARBECUE BEEF STUFFED BAKED POTATOES INSTRUCTIONS
- Preheat oven to 400°.
- Wash potatoes, removing all the dirt.
- Wrap potatoes with foil.
- Bake for 1½ hours, or until fork-tender.
- Remove foil, cut down the center of the potato, pick up and press the two ends together helping the potato to open wide.
- Season potato with optional butter, salt, and pepper. TIP: In my opinion the BBQ sauce has tons of flavor. The addition of butter, salt, and pepper is not necessary.
- Fill with 8 ounces hot barbecue beef, top with 1/3 cup coleslaw, and serve with a pickle on the side.
SLOW COOKER BARBECUE BEEF:
- To a slow cooker, add the onion, garlic, brown sugar, dry mustard, salt, pepper, ketchup, and Worcestershire sauce.
- Whisk until combined.
- Roll beef in sauce.
- Place the lid on the slow cooker and turn the heat to low.
- Cook on low 6-8 hours or until the beef is tender enough to shred.
- Remove beef from sauce, shred, return to the sauce. Turn heat to warm until ready to serve.
COLESLAW:
- Pour coleslaw mix into a large bowl.
- In a small bowl, whisk together the mayonnaise and sugar until the sugar dissolves.
- Pour over the salad mix and stir until the cabbage is completely coated.
- Store in the refrigerator until ready to serve.

The savory beef with the sweet creamy coleslaw is a heavenly combo. It’s a challenge for a hostess when serving multiple people with different palates. My solution for this all-in-one dinner is to create a baked potato bar. Below are a few topping ideas that will complement the barbecue beef and baked potato. Oh, and the barbecue beef recipe can also be easily adapted for pork or chicken.

Hot Summer Cooking Solution
It’s hot, and the last thing you want to do is heat up your house from baking giant potatoes. Below are a few suggestions for keeping your house cool while still enjoying a delicious comfort-food meal.
BAKED POTATOES

- MICROWAVE: Scrub the potato under running water, prick it with a fork, then place it on a microwave-safe plate. Microwave for about 5 minutes, flip it over, and microwave it for about 5 more minutes. Let the potato cool for just a few minutes, until it’s safe to handle. Cut the potato lengthwise so that it opens and forms a natural bowl. NOTE: THE TIME DEPENDS ON THE SIZE OF THE POTATO-ADJUST FOR SIZE AND QUANTITY.
- OUTDOOR GRILL: Heat grill to medium heat. Wash and dry potatoes. Poke potatoes all over with a fork. Rub with olive oil and sprinkle with salt. Roll each potato in aluminum foil, then fold the ends in. Place potatoes on the grill and close the lid. Grill until fork-tender, rotating every 15 minutes or so, about 1 hour. NOTE: THE TIME MAY TAKE LONGER FOR EXTRA LARGE POTATOES
- AIR FRYER: Using a fork, pierce the potatoes all over. Spray each potato with a few spritzes of oil and season with 1/4 teaspoon salt. Arrange in the basket and air fry at 400°F until a knife can easily be inserted into the center of each potato, about 35 to 40 minutes, turning halfway through cooking. Serve the potatoes, split open, topped with remaining salt and pepper and your favorite toppings. NOTE: THE TIME MAY TAKE LONGER FOR EXTRA LARGE POTATOES
BARBECUE BEEF
- SLOW COOKER: Grilling your meat is an option if you don’t mind slicing the beef instead of shredding it. But for a juicy, tender shredded beef, I recommend using a slow cooker.
How to Freeze and Thaw Barbecue Beef
TO FREEZE: Using tongs, move the cooled beef to a freezer-safe, airtight container or freezer bag. Label and freeze up to three months. TO THAW: Place the beef in the refrigerator overnight. Heat the beef in a saucepan over the stove. Serve for sandwiches or for stuffed baked potatoes.
