Almond Joy Gooey Butter Cake

Ingredients

For the Cake

  • 1 chocolate cake mix
  • 1 large egg
  • 1 cup unsalted butter, melted
  • 3/4 cup sweentened coconut, toasted
  • 1/2 cup almond slivers, toasted

For the Filling

  • 1 (8 ounce) package cream cheese, softened
  • 2 large eggs
  • 3/4 cup sweetened coconut, toasted
  • 1 cup unsalted butter, melted
  • 1 (16 ounce) bag confectioners' sugar

Instructions

For the Cake:

Preheat oven to 350°.  Spray a 9x13-inch baking dish with non stick cooking spray.  In a medium mixing bowl combine the cake mix, egg, butter, coconut and almonds.  Mix until all the ingredients are combined.  Pour into the prepared pan and spread evenly.

For the Filling:

In a medium mixing bowl add the cream cheese.  Mix until creamy, add the eggs, coconut and butter.  Mix until combined, light and fluffy.  Add confectioner's sugar in portions to the batter making sure to mix until sugar is dissolved into the cream cheese batter.  Spread over cake batter and bake 40 t0 45 minutes.  Cool on a wire rack before cutting into squares.

TIP:  Make sure you don't over bake the cake, the center should be a little gooey.
