Behind the Curtain: Water leaking into a springform pan can quickly turn a crisp crust into a soggy one. If your cheesecake recipe calls for a water bath, make sure the outside of the pan is well protected before placing it in the water. Wrap the springform pan with a large sheet of foil.

When you’re ready to serve it, transfer the frozen cheesecake to the refrigerator and allow it to thaw gradually.
